vulcanic rock on which they stand,
cellars which have undergone a
recent and very attentive restoration, refined and comfortable, the cellars
house thousands of types of wine.
Here is a symphony of wine but also
many antique corkscrews and a vast
selection of grappa, not to mention
the unusual collection of old
coffeepots and grinders. Here is a
new concept in hospitality where the
guests can choose the very special
wine they will drink with their meal. Novecento offers a wide range of
prestigious wines to their expert
or just curious clients. Occasionally dinners with a particular theme are organized with the scope of rediscovering authentic flavours
and recipes typical of the local
region and on these occasions
clients can enjoy an evening in
contemplation of the past,
sometimes regarding to the 17th
century, sometimes medieval.
The atmosphere in the cellars is
conducive to small debates and
convivial conversation between
guests from one table to another,
thus creating an association of
ideas in a homely atmosphere.

Even when dining, as in art and in
  nature, the association of colour and
sound is important.   Harmonious
  colours in a plate generally
  contribute  to a perfect combination
  of flavours. This particular harmony
  must also be accompanied by an
appropriate wine. At Novecento
we propose Italian wine of which
  we have  a vast selection and in
particular wines from the Lazio
  region. We have also dedicated
  space to French wines one of which
is Chateauneuf du Pape having
  made friends with the Mayor of that
area who produces an excellent
  quality of this wine in Provence.
  Novecento quite often has the
  pleasure of famous guests dining
  such as Nicholas Cage, Daniel Day
  Lewis, Robert De Niro, Anita Elkberg
  and they leave their autographs on
  a bottle of wine of their preference.
  There is a common saying? Good
wine is wine that one likes?  But this
  is not always true! We consider that
  the concept of?  Good? Is much
broader and complex than what it
  seems! A specialist in the field will
consider many aspects of the wine,
  more often the technical side such as
the vinification,the year, the location
  of the vineyards, the type of grape
utilized not to mention its perfume, its
colour and its taste!
